Our Executive Chef, Brian Kincaid, has crafted an exquisite five-course menu designed to complement the distinctive wines of Dunham Cellars. Each course showcases bold flavors, creative culinary techniques, and thoughtfully selected wine pairings.

First Course – Plum Steak Diane Tenderloin steak bites sautéed with forest mushrooms in a rich plum demi-glace, served with toast points. Paired with 2022 Trutina

Second Course – Mushroom Conchiglioni Cabernet Sauvignon mushroom marinara stuffed in conchiglioni pasta, topped with smoked Gouda cheese. Paired with 2022 Cabernet Sauvignon

Third Course – Halibut au Poire Butter-poached halibut accompanied by a delicate Sauvignon Blanc poached pear sauce. Paired with 2025 Sauvignon Blanc

Fourth Course – Hachis Parmentier Syrah-braised beef cheeks prepared in a hearty shepherd's pie, topped with creamy Duchess potatoes. Paired with 2022 Syrah

Fifth Course – Frittelle de Mele Traditional apple fritter finished with a Chardonnay citrus glaze and carbonated cinnamon sugar. Paired with 2025 Chardonnay
